Week Six: Update & Meal Plan

It's only been a couple of days since my last post about reaching thirty days of following the AIP & how I'm removing toxins from my kitchen and bathroom, but I wanted to post next week's meal plan earlier, since it's Easter Weekend. Happy Easter to those who celebrate!

I'm still feeling great, which is amazing!!! 🤗 This week I added collagen to my diet. Collagen has many health benefits; it supports healthy joints & ligaments, improves gut health & is great for hair & nails. I've read a lot about its benefits, here's one of the posts that I read. I use the same brand as she recommends & I purchased it from Amazon. So far, I've just been adding 2 scoops to a blender with coconut milk & a 1/2 cup frozen mango. It is delicious & tastes like a creamy treat. 

In my last blog I'd mentioned that I wanted to switch out my makeup & only use my designer stuff for special occasions. Well, I haven't made too much progress on that front yet, but I did download an app that I'd read about called Think Dirty. This app allows you to search by product name, or scan the barcode on your favorite product & it rates it from 0-10. 0 being not harmful at all & 10 being extremely carcinogenic. The first thing I did was look up the Mac lipstick that my eleven year old daughter wears for dance competitions & I occasionally dab on, because I love the color. Well, it was given the number 10. Yikes!! I'll definitely be seeking out replacements for those items, even if they are only used occasionally. It saddens me that I didn't know, or, more likely, ignored the risks. This is an issue that I'm going to have to quickly find a resolution. I'll keep you posted.

Meal Plan:

Monday-

Shrimp Tacos

For the tortillas make
Paleo Tortillas

For the filling:

1lb. Wild caught shrimp (cleaned & diced)
1 head purple cabbage
1 mango
2 TBS cilantro (finely cut)
2 limes
Coconut oil


Heat up coconut oil in a pan, place shrimp in the pan & season with 
Nightshade free taco seasoning, cook, then remove from heat, strain the shrimp & sprinkle with lime juice.

Assemble tacos by layering shrimp in your tortilla, add shredded purple cabbage, avocado cream, diced mango, & top with cilantro. 

Tuesday-

Grass fed beef filets over roasted garlic 
parsnips (this recipe is for turnips, but I just sub parsnips. I like the added roasted garlic in this recipe), topped with creamy garlic mushrooms, with a side of sautéed zucchini. 

Wednesday-


Thursday-

Honey Garlic Salmon (use coconut aminos in place of soy sauce) with 
Cauliflower Couscous (omit tomato). 

Friday-

I'm beginning week four of the AIP & I feel stronger than ever. Celebrating 90 Days

  Oh my goodness, I made it ninety days!!! This is so crazy to me, because, in the beginning, I wasn't sure that I'd last thirty. I'm proud of myself for the first time in a long time. Yay me!!! So what's next? Well, a month ago, I would've told you that I was immediately adding back eggs, nuts and chocolate into my diet. Haha!! No, seriously!!! Today, I'll tell you that while my body has made huge strides towards healing and that I know I'm on the right track, I know that I need to continue to be vigilant. I'm just not 100% there yet. I know my adrenals are taxed. I know that my gut needs to be healed. I also know that my body is not where it needs to be. So, I'm continuing to follow the elimination phase of the autoimmune protocol.  Here's the thing; I feel so much better, but I'm still struggling. It has been over a year since I wrote about being stuck . I'd like to say that it's because I've figured everything out, am at my goal weight & feeling healthier than ever, but that'd be a lie.
